Pre-selection of the best grapes in the vineyard. Green harvest in spring in order to concentrate the berries. Hand picking in 15kg boxes and carbonic maceration in barrel for a part of the Carignan. Vinification with "pigeages" for a better extraction. Long post ferment maceration. The Syrah is directly drained into French oak barrels. Malolactic fermentation completed in barrels. Selection of the best barrels for this cuvee. Aged 22 months in new oak. No filtration.
