Frégula or Fregola is a grainy type of pasta that originated in Sardinia, Italy. The pasta is made of durum wheat and is lightly roasted, which gives it its typical structure and taste.
The pasta was created by imitating Arabic couscous, which was introduced by sailors from Sardinia. This is why the pasta is so well known in Sardinia.
How to cook Fregola: Dump the Fregola into salted boiling water (1 liter of water to 100 grams of pasta). Stir several times and let it cook for 12 minutes. After cooking drain the Fregola and season to taste.
