The pasta makers at Granoro Pasta come from a long line of Italian pasta specialists. Granoro is known for its durum wheat pastas from the bread basket of Puglia, but now produces a line of gluten-free pastas made from a blend of quinoa flour, white and yellow corn flour, and rice flour. Quinoa is added to balance the intake of fiber, mineral salts and protein, which are lacking in rice and corn. They found that this carefully designed flour blend is the closest to what pasta made from durum wheat looks and tastes like. The consistency and texture are also remarkably close to that of wheat pasta, making them great for absorbing sauces.
