The main ingredient of the kimchi sauce is the juice of the Oh Na Mi kimchi that is created during the fermentation process. This is one of the reasons that makes the sauce sustainable. The kimchi sauce does not contain fish sauce and only natural ingredients, which also makes the product vegan. Natural sugars are used, but these are largely processed by the bacteria during the fermentation process.
Ingredients: chili pepper, Chinese cabbage, radish, garlic, ginger, leek, horseradish, onion, kimchi brine.
The kimchi brine contains juice of Chinese cabbage, vinegar, rice flour, salt, mushroom/seaweed extract and lactic acid. This lactic acid is created naturally through the fermentation process.
