Dried lime, Loomi, Limoo or Black Lime

Black lime is a completely dried lime, which has lost all its moisture content and is therefore very hard. It is used alot in the area's around the Persian Gulf and the middle east.
The limes give dishes a unique earthy taste. It has an intensely sour flavour, and is therefore often used in a way that makes the intensity a bit milder. This can be done by stewing it, by soaking it, and then adding only a small part or by grinding it into a powder.
Black lime is frequently used by chefs such as Yotam Ottolenghi, for example in his books Flavor and Simple.
The black limes are sold individually and weigh an average of 12 grams.
